This budget-friendly chicken and broccoli casserole is delicious AND good for your wallet.

In the hustle and bustle of family life, finding a delicious and budget-friendly meal can be a challenge.

That’s where our Chicken and Broccoli Casserole comes in.

It’s an easy, low-cost and relatively quick solution for a comforting family dinner that won’t break the bank. (And that kids might actually want to eat.)

This casserole is also incredibly versatile, so you can use leftovers or whatever you have in your fridge.

Why Chicken and Broccoli Casserole?

Chicken and Broccoli Casserole Recipe

Now, let’s dive into the recipe. This Chicken and Broccoli Casserole is straightforward to prepare, making it perfect for busy weeknights.

The ingredients are simple, and the steps are easy to follow. The result is a satisfying and hearty casserole that will become a regular in your meal rotation.

Note: Our cost estimation is based on average prices in the US, but prices will vary depending on your location. Our goal is to help you find ingredients that are generally more affordable!

Ingredients:

  • 2 cups cooked chicken, shredded
  • 2 cups broccoli florets
  • 1 can cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 1/2 cup breadcrumbs
  • Spices (salt, pepper, garlic powder)

Total cost: Around $12. Serves 4.

Cooking Directions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix the shredded chicken, broccoli florets, cream of chicken soup, half of the cheese, milk, and seasonings.
  3. Transfer the mixture to a greased casserole dish.
  4. Sprinkle the remaining cheese and breadcrumbs on top.
  5. Bake for 25-30 minutes or until the top is golden brown and bubbly.
  6. Let it cool for a few minutes before serving.

Additional Savings & Hot Tips:

  1. Bulk Chicken Purchase: Buying chicken in larger quantities can lead to significant savings. Consider purchasing a whole chicken, which often costs less per pound than pre-cut pieces. You can roast it and use some for the casserole while saving the rest for other meals.
  2. Seasonal Broccoli: Keep an eye out for seasonal sales on broccoli. When it’s in season, it’s cheaper, fresher, and more flavorful. Frozen broccoli is a great alternative when fresh isn’t available or affordable.
  3. Generic Brands: Opt for store-brand ingredients for the cream of chicken soup and cheese. These products often have the same quality as name brands but at a lower price.
  4. Homemade Breadcrumbs: Instead of buying breadcrumbs, make your own by toasting and grinding up stale bread. This not only saves money, but also reduces food waste.
  5. DIY Cream of Chicken Soup: If you have the time, making your own cream of chicken soup can be more cost-effective and healthier. It’s a simple mix of chicken broth, milk, and flour, seasoned to your liking.
  6. Cheese Ends and Bits: Look for packages of mixed cheese ends and bits at your grocery store. These are often sold at a discount and work perfectly in casseroles.
  7. Vegetable Swaps: If broccoli isn’t your favorite or you want to use what you have on hand, this casserole works well with other vegetables like cauliflower, carrots, or peas.
  8. Cook Once, Eat Twice: This casserole is ideal for meal prepping. Make a double batch and freeze half for a future meal, saving both time and money.
  9. Herb Enhancements: Fresh herbs can be expensive. Grow your own in a small kitchen garden, or use dried herbs, which are more concentrated and last longer.
  10. Leftover Makeover: This casserole is perfect for using up leftovers. Got some extra veggies, a bit of cheese, or some chicken? Throw them in to add more flavor and substance.

By incorporating these tips, you can make the Chicken and Broccoli Casserole even more budget-friendly and tailor it to your family’s preferences. Not only does this approach save money, but it also encourages creativity in the kitchen!

Lunchtime Bonus

The beauty of this casserole is that it’s just as delicious the next day. Pack leftovers for a convenient and satisfying lunch. You can even add a side salad or a piece of fruit to round out the meal.

Final Thoughts

Our Chicken and Broccoli Casserole is more than just a meal; it’s a smart, budget-friendly choice for families.

It’s a delicious way to enjoy a balanced dinner that’s easy to prepare and kind to your wallet.

Plus, with our additional savings tips, you can make the most of your grocery budget.

So next time you’re in need of a family-friendly dinner idea, remember this casserole – it’s sure to be a hit!
